This Gavi is coming from vineyards of the San Cristoforo municipality, on the left bank of the Lemme torrent, has an ecosystem viticulture that, thanks to the alluvial nature of the soil and the favorable microclimate, allows to get a Gavi docg of constant quality.

Processing
After the harvest it comes a soft pressing, follows an off-the-skins fer-mentation in stainless Inox steel tanks at a controlled temperature. Followed the maturation in steel tanks for 6 months The bottling is carried out in the spring following the harvest.
Tasting notes
Brilliant straw yellow color. Its aroma is elegant with citrus and pears williams. Its taste is fresh and dry, tastyly soft, rather savory with good minerality.
Reccomended pairing
Excellent as an aperitif and perfect with fish, soups, risottos, raw meat, salads and summer menus.
